Diamond Shell, Cloudy Bay Clams Linguine

When special ingredients and chefs collide, something magical happens. This month it’s Cloudy Bay Clams that’s had chef Mick concoct a dish that is of exceptional flavour. As we celebrate Matariki New Zealand all of June (the Māori lunar new year) in all the shops and online, we just had to get the restaurants involved too. This month’s special, Cloudy Bay Clams Linguine will have you experience the sweet, fresh, sea aromas.

The clams exhibit a fragrant scent of seaweed, a rich buttery flavour and a subtle nutty aftertaste. It’s cooked with chilli, garlic, cherry tomatoes, bottarga and pangrattato…and…a splash of Sauvignon Blanc. It’s heavenly, something a little less heavy - perfect in this heat we think!

The clam harvesting happens along New Zealand’s shoreline in USFDA classified waters. Rich in phytoplankton all year round, providing optimal feeding and growing conditions. They’re available from the shops too for you to cook at home.
