Authenticity in danger of extinction. Oxen, old and huge - capable of accumulating fats that offer exquisite taste like no other. Oxen are noble, their meat is too - the flavour telling so much about its character. No barns - they roam free and are exposed to different weather conditions. Aromatic herbs in their diets - thyme, rosemary, lavender…all grow naturally on the farmland. They become part of nature. They set the pace, the farmer (José Gordón) says it’s not about us - it’s about them! They’re looked after so well, to allow maturing without haste - each ox at its own pace. That is why it is not easy to get your hands on some of the world’s best beef, only one ox at a time is “sacrificed” and only when ready.
We were so lucky to visit him in person at his farm and restaurant, El Capricho in Spain. We were thrilled when he chose us to sell his beef in HK exclusively when available. So we don’t take this special lightly - neither should you. It’s not just special, it’s hard to come by. The José Gordón ox burger is available all of this month only, perfectly dry-aged topped with Reblochon, aioli, sour onion relish, porcini dust and crispy shallots. It is mighty fine, it is sublime…do try, more than once even - we don’t know when we’ll be able to get more of his beef back in town.
