Types of Cheeses

Cheese is often sorted by texture and then how it’s ripened.

Fresh & Soft Cheeses

In the fresh or unripened category, we find Mascarpone, Mozzarella, Halloumi and Feta cheese - quite soft and usually a little tangy. With the addition of white mould, we find favourites like Brie, Camembert and goat milk cheeses like Sainte Maure and Crottin de Chavignol. Classic blue cheeses are the British Stilton, French Roquefort, Italian Gorgonzola. 

Semi-Firm & Hard Cheeses

Getting firmer now, we move into the world of Alpine cheeses that are perfect for melting into a fondue - Raclette, Gruyère and Beaufort. Then at the hardest end of the spectrum, we find Gouda, Manchego, Parmigiano-Reggiano (a.k.a. Parmesan) and the classic Cheddar cheese.
