Dry Age Your Slab
Dry-ageing does to beef what winemaking does to grape juice. It takes a perfectly delicious piece of meat and brings out an amazing array of flavours and textures that were not present in the initial cut. Let us introduce to you our bespoke dry-ageing program and prepare to experience a steak unlike any other.
- Choose your primal and pay the wet price (i.e. pay the same price per kilo as the steaks we sell in our butcher’s counters).
- Choose your ageing time (keep in mind the longer you age, the more moisture and therefore size, you stand to lose. Anywhere up to 25%. But what you lose in moisture you more than gain in flavour.).
- When your meat is ready we will be in touch and butcher it to your specifications then arrange delivery or pick up.
