Did you say you were doing a stir-fry? This is the cut for you. Looking at the price you’d be excused for thinking that this is a ‘low and slow’ cut. But actually, blade is a lovely tender cut that lends itself to jumping in the wok. The reason for the price is that there is a line of sinew running down the middle of the steak, but it’s a piece of cake to remove as you slice your stir-frying strips.
Take a look at your steak, you’ll see a white line running roughly down the centre. All you need to do is cut your steak in half on either side of this sinew, pop your wok on the flame, slice up the two halves and you’re ready to go.
