Get your chef’s whites out, duxelle some mushrooms and whip up a little wellington why not!? Or for something just as delicious but not nearly as finicky, just whack this premium tenderloin in the oven and you’ll be slicing tender little medallions for your guests in no time.
A generous length cut from the loin, universally popular due to its tender texture and mild flavour. Where other cuts get their tenderness from marbling, being a very low-working muscle the tenderloin is naturally tender and low in fat. A willing accomplice to some hot English mustard and garlicy mashed potatoes.
Hand cut to approximately 400 or 800 grams.
