Crépinette are the most moist and succulent pork patty wrapped in a delicate sheet of caul fat (a.k.a. lace fat). This is the membrane that encases the organs of some animals (ours from pigs) and when cooked, it produces the mildest and sweetest flavour…a little like bacon that renders gently, moistening and seasoning the meat within.
They’re very simple to cook! Simply bring them to room temperature, then cook them in a frying pan over medium heat for about 7 minutes on each side.
