So what is this 'Saperavi'? The pride of the formerly soviet Georgia, Saperavi is a deep, darkly coloured red grape with a unique feature. It has red flesh. Almost all red grapes have clear flesh inside their skin. But despite this anomaly, the colour of Saperavi wine still comes predominantly from the skin.
