Langres les Champenois 180g
Langres (pronounced “long” by the way) and Champagne go hand in hand. Hailing from the high planes of Champagne-Ardenne in central France, this washed rind takes advantage of the supreme characteristics of its homeland’s namesake as it is bathed in the famous sparkling wine. It is a delicate cow’s milk washed rind but with none of the stinky barn-yard flavours you find in other washed rinds. The interior the palest shade of peach, soft, creamy with an almost whipped texture. The rind however, develops a wrinkly brain-like appearance that perfectly holds the Champagne in which it is washed. The top of the cheese is ever so slightly concave and is traditionally filled with a little more Champagne to moisten it further just before serving.
