This pretty cheese from the Pays de Bray in the north of France is known for its heart shape and its rich, buttery texture. It is said that during the Hundred Year’s War, the young girls of nearby Normandy gave these cheeses as gifts to their British soldier sweethearts.
Neufchâtel is a raw milk cheese with a bright white, downy rind that darkens gently with age. The paste is yellow and creamy next to the rind, and progresses towards a white, firm centre. It oozes tenderly if cut when warm and will no doubt make your heart melt too.
