Ortiz Anchovy Fillets
Ask any chef, and they'll tell you that anchovies are one of the industry's secret weapons. They're a concentrated source of two molecules responsible for triggering our sensation of savoriness, they're irreplaceable for adding depth of flavour and a meaty backbone to pretty much anything.
Ortiz are the gold standard in anchovies, hand-filleted fish from the Bay of Biscay preserved in olive oil. They are meaty, endlessly savoury with a relatively mild flavour. Bad anchovies make things fishy, while good anchovies (these are great anchovies) melt into your dish, elevating the flavours they mingle with adding richness and a gentle briney character.
