Sweet Pea, Mint & Feta Rigatoni
This is a new addition in our restaurants, just rolling out now as part of the summer menu. We're chuffed that we're able to offer it for you to take home too. In the restaurant, we serve it hot, but we've come to realise this one's equally good cold as a pasta salad.
In the tray is al-dente rigatoni (the big tubes), sweet peas, mint and with caramelised onion and pine nuts in a butter emulsion. It's light and fresh and summery. If you're going cold, toss through some extra rocket leaves and you'll feel very virtuous indeed.
Add to a pan over low heat with a splash of water. Toss occasionally till hot and serve with a chilled glass of Fiano. Microwave it if you really must.
