Watermelon is a fruit that swings both ways, it's happy in sweet or savoury dishes. Undeniably refreshing on a hot summer's day particularly eaten straight out of the fridge. But also a star in lots of fantastic dishes. Beautiful in a fruit salad or tropical trifle for the sweet side. But really at F&B we're into savoury.
Watermelon is amazing in a Greek-style salad with feta, cucumber, mint and liberal amounts of extra virgin. Add a twist to a spicy salsa adding cubes of watermelon to the mix. Slice wafer-thin and alternate with layers of kingfish for a sophisticated sashimi.
