With its unique flavour, there is nothing that can replace garlic. Pungent and peppery when raw, sweet-savoury and warming when cooked, garlic has wide-ranging culinary applications.

Our favourite way to eat garlic is simply to break apart the cloves, leave the paper on and scatter them on the bottom of a roasting tray beneath a joint of meat. After the meat is done the cloves are like sweet little candies that can be squeezed into your mouth!
