When too much of a good thing is ever enough we have an ultra decadent Cremeux with a layer of shaved truffle through the middle. The characteristic light, creamy interior is complemented by the delicate perfume of black truffles – it is like eating whipped cream with truffles. The texture is smooth and soft – not runny, but firmly in ‘melt-in-the-mouth’ territory.
This is a savouring cheese, no cooking here. It will take pride of place on a cheese board, served alongside a crusty baguette and a little dried or fresh fruit. The luxury level of this cheese is a match for any fine Champagne, full-bodied reds such as Cabernet Sauvignon or Barolo also work very well. Or keep it till after dinner with a glass of vin santo, muscat or botrytis riesling.
