Diamond Shell clams are harvested from 3 - 5 metre surf zones. They’re plump and contain about a 30% meat-to-shell ratio. You’ll experience sweet ocean flavours, aromas of seaweed - it has a buttery flavour and a subtle aftertaste that is nutty.
