The picanha steak, also knows as the coulotte steak is triangular shaped that is rich and very juicy. It is surrounded by a thick layer of fat called the fat cap, that releases extra flavour during the cooking process. It is a Brazilian favourite and is often prepared in the traditional churrasco style. 

We recommend you cook this steak to an internal temperate of 40.5ºC, flipping it once (total time should not exceed 7 minutes). 
Make sure the grill is very hot and be prepared for flare-ups - as the fat softens and soaks into the meat and grill.
