Noisette is the medallion made from the eye muscle of the lamb's loin, which is in the lumbar region - more commonly known as the saddle. Ours are made with pasture-fed Australian lamb, rolled and tied by our own butchers at all locations. It is a lean and flavoursome cut and just requires a quick roast in the oven.
