North Atlantic sea bream from The Netherlands, frozen from fresh. There’s nothing wrong with frozen fish, it actually means nutrients and flavours are locked in. Although sea bream is a white fish, its flavour profile is a little different to the white fish. It’s got a clean, yet meaty flavour. Strong, but without that “fishy” taste. The texture is dense, yet juicy.
Not much seasoning is needed, let the fish speak for itself - just a bit of black pepper and salt, then pan-fry, skin-side down for 3 minutes. Don’t move it around in the pan too much or the skin won’t crisp. Turn it over and cook for another 2 minutes and all done. Serve with a (spicy) home-made tomato or pineapple salsa - a light nutritious meal that is simple and quick to prepare.
