A shoulder does work, supporting a beast’s weight and moving with every step, the muscle fibres are stretched and squeezed developing rich, meaty flavours and the strength of texture to stand up to some serious cooking. Our boneless lamb shoulders make an amazing slow roast as the developed muscles slowly soften with time in the oven.
The great thing about entertaining with a slow roast is all the work is done long before your guests arrive, and you can pull a meltingly tender piece of meat out of the oven with no apparent effort.
