Our Butchers' Cuts of Lamb

Lamb is a wonderful meat. The opportunities for flavour and texture extend far beyond the classic lamb rack or chops. Cut solely from animals under a year old, past that it’s termed mutton. Our butchers expertly prepare a wide variety of lamb cuts in store to suit every occasion. They debone and tie beautiful rolled lamb legs and shoulders, ready to roast and serve with lashings of mint sauce. They trim and freeze lamb shanks, perfect for braising in a rich Irish stew.
