Description
Think of this as Gruyere dialled up to eleven: milk from cows grazing on flowers and wild onions in the summer pastures, and curds hand-stirred in copper vats over an open flame. Large wheels of deep, persistent fruitiness, a barrage of roasted hazelnuts, and the lingering kiss of smoke that comes from doing it the old fashioned way.
This is an important cheese, boldly carrying the torch of tradition. A cheese made to a recipe handed down from parents to children, produced as a living history. The flavours that arise from such meticulous adherence to tradition are nothing short of revelatory. A cheese to be savoured indeed. Serve with simple baguette slices on a rustic board with little more than a handful of cornichons. Délicieux!
