While we’re all gaga for lamb these days with its tender, delicate flavour, there’s no place for such niceties in our merguez. To stand up to some serious north African seasonings we needed something with a little guts. Welcome mutton.
In our feisty merguez sausages we take top quality cuts of mutton and mince them with a little beef and a whole load of cumin, coriander, fennel, paprika, garlic, chilli… the list continues. The result is a robust, full flavoured thin sausage perfect to add a little kick to your dinner.
