A cheesemaking marvel. Mozzarella is a ‘stretched curd’ cheese. While the cheese is warm (actually scalding hot!) and pliable, cheesemakers stretch it out and fold it back on itself to create layers akin to puff pastry. When making Mozzarella’s rich and decadent cousin, they stretch the curd into a sheet dollop in some fresh cream and a little shredded curd before sealing it all up like a plump moneybag. The result is ready to be sliced open like a soft poached egg to reveal it’s oozing centre.
The seasoned hands at Montrone have been stretching curds in the heart of Puglia for almost a century, and like the true artisans they are they take their craft very seriously. Only products with the ultimate quality are awarded P.G.I. status, so you are assured of an amazing product.
