This Irish gin got its name from a giant wave - inspired by the love for Irish mythology and links to the sea. Nine botanicals are used - lemon verbena, cardamom, peppery juniper, orange peel, coriander seeds, angelica root, orris root, cassia bark and grains of paradise.
