Scalia is based in Sciacca on the southern coast of Sicily. The town is home to an old and important fishing fleet. Local anchovies arrive in the port each day and are processed entirely by hand according to traditional methods.
Aged for at least 12 weeks these anchovies have a rich, more complex flavour.
