We recommend you baste the spring chicken with a premium olive oil and season with salt & pepper - always season the skin. To maximise tenderness, place the chicken in a NON-preheated oven, then bring the temperature to 200°C and roast for 35 - 40 minutes or calculate as 7 minutes per every 100g.
