Tomme de Savoie 200g
Cheese is a marvellous thing. All the natural variances of milk are magnified in the cheese-making process, and this is particularly true of Tomme de Savoie. In summer when the cows graze on fresh green grass the cheese is vegetal and tender, and in the winter when their diet tends towards hay, a rich caramelised sweetness comes out.
Tomme de Savoie is a semi-soft, pressed cheese with a pliable and firm texture. It has numerous irregular “eyes” spread throughout the ivory-coloured paste. The flavours widely varied. Look for grass, nuts and 'barnyard' characters, or some tangy, slight citrus and mushroom notes underlined by odours of a cave.
