Free Range Minced Pork
Our pork mince has the perfect balance of fat and meat (approximately 20% fat) to make it moist and flavoursome. It is coarsely ground and made from our free-range Valenca pork. We receive whole pork shoulders, flown fresh from Australia and mince them together with the trim from belly and legs (also Australian, also free-range). The coarse texture makes it perfect for making meatballs and burgers. The native Hong Kongers at Feather & Bone really recommend this one for Mapo Tofu too.
